Which allergens are found in Mission Foodservice products?


Eight foods account for nearly 90% of all food-related allergic reactions. They are: milk, egg, peanuts, tree nuts, fish, shellfish, soy and wheat. All Mission flour tortillas and wraps contain wheat. Milk and soy may also be found in Mission products, depending on the formulation. Mission products do not contain eggs, peanuts, tree nuts, fish or shellfish. Our Nutrition Data Pages provide complete ingredient and allergen information.

Are Mission Foodservice products gluten free?


Mission Foodservice corn products are produced with 100% corn flour; wheat ingredients are not added to the formulation. These products include Corn Tortillas, Corn Tortilla Chips, and Taco Shells. These products are produced in plants that also process wheat tortillas.

Are Mission Foodservice products Kosher?


The following products are Kosher: Corn Tortillas, Flour Tortillas, Pre-cut Unfried Chips and Strips, Pre-fried Tortilla Chips, Wraps, and Taco Shells. Look for the Kosher symbol in our packaging.

Tortilla Chips and Taco Shells


Tortilla Chips and Taco Shells


The product has a stale or tough taste.


Possible Causes


The package may have been left open and exposed to the air.

Solution


To reconstitute the products, place under a heat lamp, in a warmer, or in a warm oven. These products can only be reconstituted using dry heat.

The tortillas are greasy or are retaining excessive grease after they have been fried.


Possible Causes


The tortillas are cold.
The frying oil is not at the proper temperature (has the fryer been calibrated?).
The tortillas were left in the oil too long.

Solution


Tortillas should not be fried until they have been warmed to room temperature. Frying should take place at an oil temperature of 350-360°F. Frying time is approximately 35-45 seconds or until the oil is finished bubbling. Do not use table tortillas for frying.

The tortillas are greasy or are retaining excessive grease after they have been fried.

Pressed Flour Tortillas

The tortillas stick together and tear when pulled apart.


Possible Causes


Tortillas are still frozen and not completely thawed. The tortillas have been compressed in the shipping carton.

Solution


Allow the tortillas to reach a room temperature naturally. Carefully bend the tortilla, starting on the outside, and work your way around the tortillas towards the middle. Do not take the package of tortillas and fold them back and forth as this will break the surfaces of the tortillas.

Possible Causes


The tortillas may have been placed inside the package before they had cooled properly. The tortillas may not be properly baked.

Solution


Tortillas can be separated by carefully pulling each tortilla apart, starting from the outside edges and working to the center.

Pressed Flour Tortillas


The tortilla bubbles and fills with oil when fried.


Possible Causes


The tortilla has sealed surface with moisture trapped inside. When the tortilla is placed in the oil, the moisture turns to steam and puffs the tortilla.

Solution


As done with pizza dough, the tortillas should be docked. Gently pierce the surface of the tortilla to release the air.

The product is dry and cracking around the edges.


Possible Causes


The tortillas have been left open to airflow. The tortillas are being stored near extreme heat.

Solution


Make sure the package is closed after removing the needed tortillas. Store away from extreme heat.

Possible Causes


The tortillas are being used while they are still chilled.

Solution


Make sure the tortillas are at least room temperature before using. The tortillas will perform best if warmed using moist heat. Place the tortillas in a steamer or a microwave just long enough to warm (approximately 45-60 seconds per package). You may also use a griddle, warming each side for approximately 10 seconds.

The fried tortillas are oily.


Possible Causes


The tortillas are cold. The frying oil is not at the proper temperature (has the fryer been calibrated?). The tortillas were left in the oil too long.

Solution


The tortillas should not be fried until they have been warmed to room temperature. Frying should take place at an oil temperature of 350-360°F. Frying time is approximately 25-40 seconds or until the oil is finished bubbling.

The fried tortillas are oily.

Pre-cut Unfried Tortilla Chips

The tortilla chips are stuck together in the box.


Possible Causes


The product is frozen.

Solution


Allow the product to thaw through refrigeration. This usually takes approximately two days. Fluff the chips before placing in the fryer.

Possible Causes


The product is frozen. The frying oil is not at the proper temperature (has the fryer been calibrated?). The chips were left in the oil too long.

Solution


The tortilla chips should not be fried until they have been warmed to room temperature. Frying should take place at oil temperature of 350-360°F. Frying time is approximately 35-45 seconds or until the oil is finished bubbling.

The tortilla chips are absorbing oil when fried.
