Original Recipe Serves 6

INGREDIENTS

6 cups Green Papayas peeled, seeded and julienne (as green papayas may be difficult to find, a good substitution is a firm unripe pear or Granny Smith apple) 
1 cup  Carrot , julienne 
4 tsp. Minced Serrano Chiles  
2 tsp. Crushed Garlic  
4 Tbsp. Chopped Fresh Mint  
6 Tbsp.  Lime Juice  
2 Tbsp.  Fish Sauce (can be found in the Asian section of most supermarket 
3 Tbsp. Brown Sugar  

DIRECTIONS

1.) Toss all ingredients together in a non-reactive bowl. Cover and refrigerate for 30 minutes to allow the flavors to blend.
