1 1/2 cups dried Red New Mexican Chiles with seeds
4 cloves Garlic , minced
3 tsp. dried Oregano
3 cups Water
2 lbs. Lean Pork , cut into strips or cubes
Chili Rellenos (see Side Dishes)
1.) Combine the chilies, garlic, oregano and water.
2.) Place the pork in a glass pan and cover with the chili mixture. Cover and marinate overnight in the refrigerator.

4.) Preheat oven to 300 degrees F. Bake the marinated Adobada for 1 1/2 to 2 hours, or until pork is very tender and starts to fall apart.
