Onion & Roasted Garlic Soup with Tortilla Croutons

Original Recipe Serves 12

INGREDIENTS

3 heads  Garlic  
3 Tbsp. Olive Oil  
6 Tbsp. Unsalted Butter  
3 large Onions , sliced 
6 14 oz. cans Chicken Broth  
6 14 oz. cans Beef Broth  
1 1/2 tsp.  Salt  
3/4 tsp.  Sage , rubbed 
6 cups Smoked Gouda Cheese , shredded 
1 batch Garlic Tortilla Croutons  (see Related Recipe) 

DIRECTIONS

1.) Slice top off garlic heads, drizzle with olive oil and wrap in foil and bake at 350° F for 45 minutes.

2.) Over medium-low heat, melt butter and sauté onions until well caramelized, approximately 15 – 20 minutes.

3.) Peel garlic, smash with spoon to break it up and add to sautéed onions. Add broth, salt and sage. Simmer for 15 to 20 minutes. Ladle into bowl, top with cheese and Garlic Tortilla Croutons. Makes 12 servings.
