4 oz. vol. Rice Wine Vinegar
2 oz. vol. Granulated Sugar
1.5 tsp. Pickled Ginger
16 oz. vol. English Cucumbers , matchstick cut
6 oz. vol. Red Onions , small dice
1.) Bring vinegar , sugar and ginger to a simmer in a small saucepot. Reduce by almost half.
2.) Remove ginger and cool.
3.) Add matchstick cut cucumbers and diced red onions.
4.) Marinate at least one hour to allow flavors to develop.
5.) Label , Date and Refrigerate.
