1/2 lb. Piquillo Peppers , jar
1/2 oz. Almond Slivers, blanched, peeled
2 each Whole Garlic Cloves , smashed
2 oz. Grated Parmesan Cheese
1/4 cup Fresh Parsley , rough chopped
1/2 tsp. Salt
1/4 tsp. Pepper
4 fl. oz. Extra Virgin Olive Oil
1.) Add all ingredients to food processor and puree until smooth. Reserve for assembly. If pesto is a bit thick, just add more olive oil.
