Poblano Vinaigrette

INGREDIENTS

2 Tbsp.  Olive Oil  
1 Poblano Chile  
1 3/4 oz. (1/3 cup) Red Onions , finely chopped 
1 3/4 oz. (1/4 cup) Lime Juice  
1 Tbsp. Fresh Thyme  
2 cloves  Garlic , minced 
2 1/4 oz. (1/3 cup) Olive Oil  
1/2 tsp.  Salt  
1/2 tsp.  Pepper  

DIRECTIONS

1.) Rub Poblano chile with oil. Place on a pre-heated grill and grill until skin is blackened on all sides, about 4-5 minutes. Remove some of the skin from the chile. Remove stem and seeds and chop finely.

2.) Place chiles in a mixing bowl and add remaining ingredients, combine. Remove half of the mixture and puree in a blender. Transfer back into the mixing bowl and whisk to combine.
