INGREDIENTS

5 oz.  Mushrooms  
5 oz.  Eggplants  
5 oz. Green Bell Peppers  
5 oz. Red Bell Peppers  
5 oz. Yellow Onions  
5 oz.  Zucchini  
5 oz. Yellow Squash  
   
MARINADE:   
2 oz.  Oil  
2 oz. Dijon Mustard  
1/4 oz.  Basil  
1/8 oz.  Salt  
1/8 oz.  Pepper  
1/2 oz.  Lemon Juice  
1 oz. Apple Cider Vinegar  

DIRECTIONS

1.) Combine the ingredients for the marinade.

2.) Marinate and roast vegetables at 450 degrees F for 10-15 minutes.
