- 12 Each 8" Heat Pressed Flour Tortillas (10410)
- As Needed Arugula
- 3 cup Savory Yogurt see related recipe
- 3 Lbs. Charred Carrot see related recipe
- 3 Lbs. Habanero Honey see related recipe
Directions
- Place a three finger pinch of arugula onto one 8” Mission® Flour Tortilla.
- Top tortilla with ¼ Savory Yogurt, ¼ lb. of Charred Carrots, and a light drizzle of the Habanero Honey.
- Fold tortilla into a portable wrap.
Ingredients- 3 cup Plain Yogurt
- 1 Tbsp. Ground Cumin
- 1 1/2 tsp. Onion Powder
- 1 1/2 tsp. Garlic Powder
- To Taste Salt
Directions
- Combine the first four ingredients together and mix until uniform.
- Season yogurt with salt to taste and hold cold for service.
Ingredients- 1/4 cup Smoked Paprika
- 2 Tbsp. Smoked Paprika
- 2 Tbsp. Fennel Seed, toasted & ground
- 1 tsp. Black Pepper
- 1/4 cup Ground Cumin
- 2 Tbsp. Mustard Powder
- 2 Tbsp. Salt
- 3 Lbs. Carrots, cut into 1/2" thick slices
- As Needed Olive Oil
Directions
- Combine the first six ingredients to make spice blend. Reserve.
- Toss carrots in olive oil until coated and season with the spice blend.
- Cook carrots on the grill until heavily charred and hold hot for service.
Ingredients- 1 cup Honey
- 1 Each Habaneros, seeded
Directions
- Combine the honey and pepper in a sauce pot on medium low heat and steep for 15 minutes.
- Remove pepper and hold honey for service.
