1 Mission® 12" Multigrain Tortilla (14634)
4 oz. Golden Delicious Apples , chopped
2 oz. Fresh Dates (Majool), finely chopped
5 oz. Toasted Pine Nuts , finely chopped
1/8 oz. Mint Leaves, chopped
8 oz. Yogurt Spiced Marinade (see Related Recipe)
2 oz. Lamb Leg, cut into 2" x 2" cubes
1 oz. Yellow Bell Pepper , cut into 2" x 2" cubes
1 oz. Pearl Onion , blanched and peeled
1.) Make Yogurt Spiced Marinade. Place half the marinade in a bag and add the lamb. Massage lamb in bag and let marinate for 24 hours, turning occasionally.
2.) Combine apples and dates and mix with toasted pine nuts and mint leaves. Add to remaining half of Yogurt Spiced Marinade. Set aside.
3.) Skewer lamb cubes, peppers and onions. Coat with olive oil.
4.) Grill on charbroiler until cooked.
5.) Cut Mission® Multigrain Tortilla into eight triangles. Brush with olive oil and grill 1–2 minutes or until brown.
6.) Place one cube of the meat and other ingredients inside tortilla triangle.
7.) Roll small end of triangle toward fat end of triangle and tuck small end under fat end, forming a tube shape.
8.) Pin 5" skewer through tortilla triangle tube holding the tube together and ingredients inside.
9.) Dollop with reserved yogurt mixture.
10.) Garnish with pine nuts and serve.
