Eight foods account for nearly 90% of all food-related allergic reactions. They are: milk, egg, peanuts, tree nuts, fish, shellfish, soy and wheat. All Mission flour tortillas and wraps contain wheat. Milk and soy may also be found in Mission products, depending on the formulation. Mission products do not contain eggs, peanuts, tree nuts, fish or shellfish. Our product pages provide complete ingredient and allergen information.

Mission Foodservice corn products are produced with 100% corn masa flour; wheat ingredients are not added to the formulation. These products include Corn Tortillas, Corn Tortilla Chips, and Taco Shells. These products are produced in plants that also process wheat tortillas.

The following products are Kosher Certified: Corn Tortillas, Flour Tortillas, Pre-cut Unfried Chips and Strips, Pre-fried Tortilla Chips, Wraps, and Taco Shells. Look for the Kosher symbol in our packaging.

Our Mission Foods brand products are not manufactured with animal derived ingredients, making them acceptable for vegetarian and vegan diets.

Mission Product FAQs
Tortilla Chips & Taco Shells

Possible Causes
The package may have been left open and exposed to the air.
Solution
To reconstitute the products, place under a heat lamp, in a warmer, or in a warm oven. These products can only be reconstituted using dry heat.
Pressed Flour Tortillas

Possible Causes
The tortillas may have been compressed in the shipping carton. Or tortillas may have been frozen and not completely thawed. Please note that Mission Foodservice products are shelf stable and should be stored at ambient room temperature. We do not recommend freezing or refrigerating our products as it negatively affects product performance.
Solution
Carefully bend the tortilla, starting on the outside, and work your way around the tortillas towards the middle. Do not take the package of tortillas and fold them back and forth as this will break the surfaces of the tortillas. Watch the Tortilla 101 Video for more information on storage and handling.

Possible Causes
The tortillas have been left open to airflow. The tortillas are being stored near extreme heat.
Solution
Make sure the package is closed after removing the needed tortillas. Store away from extreme heat.

The tortillas are being used while they are still too cold. Please note that Mission Foodservice products are shelf stable and should be stored at ambient room temperature. We do not recommend freezing or refrigerating our products as it negatively affects product performance.
Solution
Make sure the tortillas are at least room temperature before using. The tortillas will perform best if warmed using moist heat. Place the tortillas in a steamer or a microwave just long enough to warm (approximately 45-60 seconds per package). You may also use a griddle, warming each side for approximately 10 seconds.
Fry Ready® Tortillas

Possible Causes
The tortillas were put into the fryer when cold. The frying oil is not at the proper temperature. (ensure the fryer has been calibrated). The tortillas were left in the oil too long.
Solution
The tortillas should not be fried until they have been warmed to room temperature. Frying should take place at an oil temperature of 350-360°F. Frying time is approximately 25-40 seconds or until the oil is finished bubbling.

Possible Causes
The tortilla has sealed surface with moisture trapped inside. When the tortilla is placed in the oil, the moisture turns to steam and puffs the tortilla.
Solution
As with pizza dough, the tortillas should be docked. Gently pierce the surface of the tortilla to release the air.
Pre-cut Unfried Tortilla Chips

Product should be at room temperature before using. Products should not be frozen prior to use.

Storage & Handling

To ensure that our operator customers get the best results when using Mission tortillas, several basic handling procedures are recommended. When handled in this manner, results will always be outstanding:
Handle with Care
Mission Foods stores and ships all of our flour tortillas/flavored wraps at ambient/shelf stable temperature.
shelf-stable temperature tortillas are ready-to-use right out of the box.
Before opening bag, gently twist the stack of tortillas back and forth 3-4 times to loosen and separate the individual tortillas.
Once bag is opened, make sure to cover/seal the remaining tortillas to keep the tortillas from getting dry and cracking.
Do not remove and stack bags out of box more than 4 packages high. Stacking bags higher than 4 high may cause the product on the bottom of the stack to stick and crack.
Though not recommended, product can be refrigerated. If using tortillas that have been refrigerated, bring the tortillas to room temperature by removing from the case and letting them stand in the bag for 4-6 hours prior to using.
Tortillas give the best results when warmed prior to use:
- Flat top grill – warm for 5-10 seconds per side at 350°F
- Steamer – 3-7 seconds in a table top steamer
- Microwave – 10-20 seconds depending on microwave
Storing Flour Tortillas
DRY STORAGE
Store in a cool dry place. Avoid storing near any source of heat.
Keep the product in the original box. The dividers in the box are designed to keep the product from sticking together due to the weight and pressure. If bags are removed from original box, do not stack higher than 4 bags high. Over stacking will cause the tortillas to stick together.
REFRIGERATED STORAGE
Mission Flour Tortillas can be stored refrigerated, in their original sealed bags between 35°F – 40°F. This will not affect product quality.

When handled properly, Mission Corn Tortillas will perform and taste freshly made. Take the time to handle them right and you’ll always get excellent results:
Handle with Care
Mission corn tortillas are stored and shipped shelf-stable temperature.
While still in their bag, gently twist the stack of tortillas to loosen and separate the tortillas.
When frying corn tortillas, they perform best when fried with the oil temperature between 350°F -360°F. This will ensure that the tortillas are fried quickly and that the tortillas will absorb less oil.
Storing Corn Tortillas
Dry Storage
Store in a cool dry place. Avoid storing near any source of heat.
Keep product in original box. If bags are removed from the box, avoid stacking more than height of the original box.
Refrigerated Storage
Mission Flour Tortillas can be stored refrigerated, in their original sealed bags between 35°F – 40°F. This will not affect product quality.

Adhering to the following handling tips will result in the optimum finished product. Note that pre-cut unfried chips & strips will look and feel dry, which means lower oil absorption and greater savings.
Handle with Care
Mission Foods stores and ships all pre-cut unfried tortilla chips at shelf-stable temperature.
If the chips are cold, please make sure that you bring the chips up to room temperature before frying.
Use hands to lightly separate any clumps of pre-cut unfried chips.
Maintain frying oil temperatures between 350°F -360°F.
Frying time ranges from 35 – 45 seconds, or until the oil is no longer bubbling; gently move chips or strips with tongs to ensure even frying.
CAUTION: do not overfill the fryer with chips or strips; doing so will reduce the oil temperature which will cause more oil absorption and keep the chips or strips from fully cooking resulting in undercooked or raw product.
Storing Pre-cut Unfried Chips & Strips
Dry Storage
Store in a cool dry place. Avoid storing near any source of heat.
Keep product in original box.
Refrigerated Storage
PCUF Chips and Strips can be stored refrigerated, 35°F – 40°F. This will not affect product quality.

Shelf-stable temperature tortilla chips and taco shells are ready-to-use right out of the box.
Storing Tortilla Chips & Taco Shells
Store in a cool, dry place. Avoid storing near any source of heat.
Chips and taco shells should always be stored in closed containers or packages; this ensures maximum freshness and shelf life. Both are fragile and nothing should be stacked or stored on top of boxes.
Do not refrigerate or freeze.
If chips or shells are left standing in open air they become tough and chewy. Place them under a heat lamp to crisp or heat taco shells in a 300ºF oven for 3 minutes.
