Hearty Potato and Ancho Chile Chimichanga

Original Recipe Serves 4

INGREDIENTS

4 Mission® 12" Stretched Style Flour Tortillas (10330)  
Potato Mixture (see Side Dishes)   
Roasted Ancho Chile Sauce  (see Related Recipe) 
3/4 cup Feta Cheese , crumbled 
1 1/2 cups Fresh Spinach Leaves, packed (rinsed and dried well) 

DIRECTIONS

1.) Heat Mission® flour tortillas according to package instructions.

2.) Divide the potato mixture among the tortillas. Top with a large spoonful of Roasted Ancho Chile Sauce, feta cheese and spinach. Fold in sides of tortilla, then fold forward tightly.

3.) Place in a deep fat fryer or pan of vegetable oil heated to 375º F. To keep the tortilla together, hold the chimichanga with tongs while frying. Fry until golden brown. Repeat process. Serve.
